Cinnamon Spiced Pumpkin Seeds

Pumpkins. Not only are they delicious, but they are packed with important vitamins and minerals. I was never a pumpkin fan growing up, but I’ve been exploring their versatility lately, and I gotta say – I’m a believer. Pumpkins are technically a fruit because they contain seeds; however they identify more a vegetable in terms of their nutritional profile.


As someone with a nut allergy, I look to pumpkin seeds as a great source of fiber and nutrition for snacks – and this recipe does NOT disappoint. They are packed with healthy fiber, aka a dietitian’s best friend, and provide a great source of protein as well, making them well-rounded and complete as far as nutrients are concerned. This flavorful spin on pumpkin seeds can be your “something sweet” this fall season, without derailing your goals…..and of course…..they contain less than 5 ingredients!


Ingredients:

1 cup pumpkin seeds, dried and shelled

1 tbsp extra virgin Olive Oil

2 tbsp maple syrup

1/2 tsp sea salt

1/2 tsp cinnamon


Directions:

1. Preheat the oven to 300 degrees

2. Add all ingredients to a mixing bowl and combine until seeds are evenly coated

3. Transfer seeds to a baking sheet lined with parchment paper and bake for 20-30 minutes. If you are using fresh seeds from your pumpkin, increase baking time to 40-50 minutes

4, Remove from the oven and cool completely before enjoying!

1 serving = 1/4 cup seeds
